He started his YouTube cooking channel “Happeace” hoping viewers learn about the wonders of Japanese cooking and make “true Japanese dishes” with the ingredients available in North America. These videos were created so that viewers may feel “Happy” and “Peace”. He was the head chef of a Japanese restaurant for 4 years that continues to be selected as one of Canada’s 100 Best Restaurants every year with his team work. He had served food to the official residence of the Consul General of Japan. He originally immigrated to Canada with the ambition to familiarize authentic Japanese cuisine in this country. He reaffirmed his belief that “Japanese cuisine is one of the best in the world” in Toronto where multicultural dishes are enjoyed. The Japanese cuisine is a “subtractive cooking” and removes as many seasonings as possible to amplify the natural flavor of the ingredients.
